Vegetables, particularly tomatoes are of great importance in human nutrition as they supply essential vitamins and minerals (which are necessary to maintain good health) to the diet, provide variety to the food and make food appetizing. In Nigeria, an annual total area of one million hectares is reportedly used for its cultivation producing about 2.5 million tons at 25 ton per hectare while it makes up about 18 per cent of the average daily consumption of vegetables in Nigeria homes.

However, an alarming 45 per cent of tomatoes harvested in the country is lost due to poor Food Supply Chain (FSC) management; price instability resulting from seasonal fluctuation in production and the supply preference of farmers and middlemen for urban markets than processors due to low farm gate prices.

In order to control waste in the value chain, the article seeks to enlighten potential investors on the production of tomato flour in Nigeria.

One major means of preserving tomato fruit is by drying. Drying is one of the oldest techniques of preserving agricultural products. Drying as a process for food conservation and preservation seems to be an adequate method under most conditions in the developing economies.

The production process for tomato flour is simple and is state below

1. Dehydration
2. Milling
3. Packaging

The sector remained stagnant during the oil boom decade of the 1970s, and this accounted largely for the declining share of its contributions.  The trend in the share of agriculture in the GDP shows a substantial variation and long-term decline from 60% in the early 1960s through 48.8% in the 1970s and 22.2% in the 1980s. Unstable and often inappropriate economic policies (of pricing, trade and exchange rate), the relative neglect of the sector and the negative impact of oil boom were also important factors responsible for the decline in its contributions.

On its diversity, Nigerian agriculture features tree and food crops, forestry, livestock and fisheries.  In 1993 at 1984 constant factor cost, crops (the major source of food) accounted for about 30% of the Gross Domestic Products (GDP), livestock about 5%, forestry and wildlife about 1.3% and fisheries accounted 1.2%.

One of the food crops grown in Nigeria is Maize. Nigeria has an annual maize production in excess of 7 million metric tons and ranges as the ten largest producers in the world and this articles examines the investment opportunity in establishing corn flake production plant in Nigeria.

The major raw material used for the manufacture of corn flakes is maize. Maize is grown in all the parts of the country. The production process to make corn flakes is stated below

I. Raw Material: The best material is hard dent corn, because of its transparency after gelatinization and good looking of the products.
II. Adopting the drying-degerming method. First, to regulate the moisture with the hot steam and hot water exceeding 90℃.And then to pre-grind the corn without germ. The mixture would separate out grits after evenly sieving.
III. Ingredients: To add the salt, malt and the other ingredients with the water during cooking the grits, it can make the water content up to 20%~35%, then to cook the grits with steam of 1.47X105P until gelatinized to semi-transparent.
IV. Drying: to dry and extrude the grits at 66℃ until the moisture is 19%~20%, cool it down to 30~40℃. Then to press the flake to  0.7~1mm with steel roller. Before pressing, the corns should be made dispersedly to ensure the chips evenly distributed.
VI. Roasting: Temperature: 250~350℃, Time: 20~150 seconds. to make the moisture down to 10%. To fry the chips with the temperature not exceed 200℃,the corn chips would be crispy.
VII. Spraying enhancer: To spray with nutrient substance to make it intensified corn chips or spread on sugar, flavor if necessary. 

The process is simplified below

Corn →Cleaning →Peeling and Degerming →Classifying →Cooking →Drying & Rlending →Rolling, Flaking or Extruding →Toasting →Cooling →Packing →Finished Products

Depending on the production production process adopted, some of the equipments required for the production of corn flakes includes cleaning equipment, degermer, roller mills,sifters, grinding tables,Storage (Silo), Mixer, Extruder Cooker, Coating Machine, Storage Bin, Packaging Machine and aspirators.

Corn flakes are food made by combining corn with sugar, vitamins and minerals. They are usually served as breakfast largely taken with milk.

Currently corn flakes is consumed by the international community, and a portion of middle and upper income groups of the urban population.

Maize (Zea mays, L.) is a staple food of great socio-economic importance in the Sub-Saharan Africa of which Nigeria is inclusive with per capital kg/year of 40.

Nigeria has an annual maize production in excess of 7 million metric tons. In terms of volume produced, maize is the third most important cereal grown in Nigeria after sorghum and millet. It comes after wheat and rice in terms of world importance.

The total land area planted to maize in Nigeria is above 2.5 million hectares with an estimated yield of about 1.4 metric tones per hectare.Maize is produced in virtually all the states in Nigeria, though some states produce more than others.

Some of states that maize is produced in large quantity in Nigeria includes Plataeu, Kano, Kaduna, Sokoto, Gombe, Bauchi, Zamfara, Benue , Kogi , Nassarawa and Taraba.

Different products like corn starch, corn flakes and corn flour can be produced from maize seed. This article focuses on the investment opportunity existing in the production of maize flour.

Maize flour is derived from grounded and desiccated seed of the maize seeds. It is whitish in colour and It is the second most produced and consumed flour after wheat flour, competing with rice flour.

Dry corn millers process corn in one of three ways:

1. A tempering degerming process;
2. stoneground or non-degerming process; or
3. alkaline-cooked process.

The main products of tempering / degerming process are

Flaking grits (large grits) 30 – 40 %
Brewers grits Small grits) 20%
Corn meal (coarse powder) 12 %
Corn flour( fine powder) 10%
Animal feed including germ 17-20 %

The most common process is the “tempering-degerming.” The first step in this process is to dry clean the corn, separating fines and broken from the whole corn. Occasionally wet cleaning follows to remove surface dirt, dust and other matter. The clean corn is tempered to 20 percent moisture. While moist, the majority of the outer bran or pericarp, germ, and tip cap are removed, leaving the endosperm. The bulk of the corn endosperm, known as the “tail hominy fraction,” proceeds through the degerminator, is dried, cooled, and sifted. A portion of this “fraction” is isolated as large flaking grits. Further separation is accomplished using roller mills, sifters, grinding tables, and aspirators so that an infinite variety of smaller grits, meals and flours can be produced.

Some of the equipments required for the production of corn flour includes cleaning equipment, degermer, roller mills,sifters, grinding tables, and aspirators.

The product can be fortified with vitamin A and the packaging would be in PP bags and different sizes of 2Kg, 5Kg, l0Kg, 25Kg and 50Kg packs can be produced to meet the differents needs of the market.

Cassava is the most important root crop in Nigeria. Apart from being a staple crop in both rural and urban household’s cassava is a major source of income to cassava farmers and processors in the rural areas.

Cassava alone contributes about 45% of agricultural GDP in Nigeria for food or domestic purposes but its industrial processing and utilization has been very limited. Currently, the country produces about 40,000,000 tons of the cassava tubers annually.

Corn starch is the major industrial raw material for glucose and fructose syrup production in the US and in many other parts of the world. However, good results have been obtained for starch processing in Europe, South America and Asia when alternative starch sources are used including potatoes, wheat, barley, rice and cassava.

Glucose syrup production from cassava can be subdivided into the following process areas of liquefaction, saccharification, and purification.

Glucose syrup is a sweetener used industrially in Nigeria, for example in the food, soft drink and confectionery industries. The establishment of a process for conversion of cassava starch to glucose syrup would enhance the local capability of glucose syrup production.

The total sugar requirement for soft drink bottlers and juice manufacturers in Nigeria is estimated at 280,000 tons of sugar annually indicating a large for glucose syrup in Nigeria.

Sorghum (Sorghum bicolor (L.) Moench) is a cultivated tropical cereal grass. It is generally, although not universally, considered to have first been domesticated in North Africa, possibly in the Nile or Ethiopian regions as recently as 1000 BC1. The cultivation of sorghum played a crucial role in the spread of the Bantu (black) group of people across sub-Saharan Africa.

Today, sorghum is cultivated across the world in the warmer climatic areas. It is quantitatively the world’s fifth largest most important cereal grain, after wheat, maize, rice and barley. In Africa, sorghum is still largely a subsistence food crop, but as report will show it is increasingly forming the foundation of successful food and beverage industries in Nigeria.

Nigeria is the second largest producer of sorghum, with the majority of domestic production used for household consumption/fodder. Sorghum is produced in virtually all the states in Nigeria, though some states produce more than others.

Some of states that maize in large quantity in Nigeria includes Plataeu, Kano, Kaduna, Sokoto, Gombe, Bauchi, Zamfara, Benue , Kogi , Nassarawa and Taraba.

Sorghum is increasingly being used as a substitute for more expensive and imported raw materials. A major portion of sorghum grain currently utilized by Nigeria industries {approximately 200,000 MT} is used by the larger beer sector, followed by the non-alcoholic malt beverage sector. Currently, several brands of larger beer with major sorghum content are being marketed.

Historically, malt drink was used as food for children and the sick, but has since become a mainstream beverage consumed by people of all ages. More importantly, malt-based drinks have developed a reputation over the centuries for their nutritional value, a message that is attractive for manufacturers to carry across in today's climate of increasing health awareness.

There are more than 20 breweries operating in Nigeria with an annual production capacity close to 20 million hectoliters.

The use of sorghum malt was encouraged by a ban on imported barley malt and an economic recession, resulting in a substantial reduction in the sales and production of barley based beer.

Caramel is a beige to dark-brown confectionery product made by heating any of a variety of sugar / carbohydrates like dextrose, invert sugar, lactose and malt sugar., either alone or in the presence of acids, alkalies, and/or salts. The acids that may be used are sulfuric, sulfurous, phosphoric, acetic, and citric acids; the alkalies are ammonium, sodium, potassium, and calcium hydroxides; and the salts are ammonium, sodium, and potassium carbonate, bicarbonate, phosphate (including mono- and dibasic), sulfate, and bisulfite. Antifoaming agents, such as polyglycerol esters of fatty acids, may be used as processing aids during manufacture.[5] Its color ranges from pale-yellow to amber to dark-brown.

It is used by soft drinks companies, pharmaceutical companies and bakeries as flavoring in puddings and desserts, as filling in bonbons and as a topping for ice cream and custard.

Cane sugar or sucrose is our main source of raw material in Nigeria. If invert sugar, dextrose, or glucose is heated alone, a material is formed that is used for flavoring purposes; but if heated in the presence of certain catalysts, the coloration is greatly heightened, and the darker brown products formed can be used to color many foodstuffs and beverages.

The market for in Nigeria caramel is national. With a population of over 165 million people and an estimated national population growth rate of 5.7% per annum ,an average economic growth rate of 3.5% per annum in the past five {5} years, Nigeria has a large market for caramel.

The demand is high but local supply low hence the need for importation in the past. Industry data suggest that Nigerian companies imported USD 308,370 worth of caramel from India alone with total quantity of 379,239.

Local production of caramel will thus help to conserve scare foreign exchange and create employment.
